The B-complex vitamins and minerals have been partially boiled out and can be found in the water used to boil the vegetables in (drink that stuff!). Rice and wheat contains a different set of nutrition compared to boiled vegetables (and some nutritional content in common) - so, rice and wheat cannot, in and of themselves, be substituted for with boiled vegetables. Having said this, a person can certainly survive without every eating rice and wheat foods.
